Healthy Indulgent Fudge!

Looking for a decadent yet healthy treat? This cacao fudge recipe ticks all the boxes! It's adapted from one of Dr. Mindy Pelz's recipes. Packed with nutrients, it's a delicious treat that’s good for you and child-approved! Perfect for a snack, dessert, or even a quick energy boost, this recipe is a must-try.


The cacao powder doesn't just add a a rich, chocolatey flavour - it’s also a good source of potassium, zinc, dietary fibre, iron, magnesium, phosphorus, copper, and manganese. 


Ingredients:

Fudge Base:

  • 1/2 cup organic coconut oil

  • 1/2 cup cacao powder

  • 1/2 cup almond butter

  • 1/4 cup maple syrup

  • 1/4 tsp sea salt


Toppings:

  • Anything you like! Some great options include:

    • Freeze-dried raspberries

    • Desiccated coconut

    • Chopped nuts (pistachios work well!)

    • Seeds

    • Flaxseed

    • Superfood powders


Instructions:

  1. In a small saucepan over low heat, stir together the coconut oil, cacao powder, almond butter, maple syrup, and sea salt. Mix until smooth and silky.

  2. Line a small dish or loaf pan with baking paper. Pour the melted mixture into the prepared pan.

  3. Place the dish in the freezer for 10-15 minutes, just until the mixture thickens enough to hold your chosen toppings. Sprinkle generously.

  4. Return the dish to the freezer and let it chill for 30-40 minutes, or until the fudge is fully firm.

  5. Once set, remove the fudge from the pan, slice into squares, and enjoy your rich, chocolatey treat!


Storage:

Store any leftovers in the freezer. This keeps the fudge fresh for up to a month and prevents it from melting. Simply take out a piece when you need a little pick-me-up!

Tips:

  • Experiment with flavours: Add a splash of vanilla extract or a pinch of cinnamon to the fudge base for an extra flavour twist.

  • For a crunchier texture, mix in some chopped nuts or seeds directly into the base before pouring it into the dish.

  • Serve these as a dessert with some fresh fruit
